BASOSTA (PEARLED WHEAT)

 Ingredients:

 ½ Kg pearled wheat, ½ Kg meat, six table spoons oil and salt.

 Preparation:

  1. Cut meat into big chunks and boil in large amount of water, add salt and leave to cook.
  2. When the meat is completely cooked set it aside and bring the broth back to boil.
  3. Add the pearled wheat after washing and the water should be at least 3 inches above it.
  4. Cover the pan and leave the pearled wheat to boil over high heat for at least five minutes, turn down the heat and stir to prevent lumping.
  5. Leave on low heat until all water is absorbed.
  6. Heat the oil and pour over the fully cooked pearled wheat, top with meat and serve warm.

 Optional

 Add previously cooked chick pea during cooking.
